The stone isn't breathable. It's the lime mortar that is breathable. Bricks would be fine.

OK onto the next issue, the wall is built back up, just about anyway. As there isn't a softit, it's concreted in both internal/external so no air flow from the bottom, I've install lap vents, but can I put instalation behind the wall, or will this cause damp issues?
Next point, once I start to patch the walls, most lime just flaked off so ended up with big patches of bare wall, can I just screw wood fibre boards to the wall, if so do I need to worry about not being level, as in air pockets (not sure if that's what they are called). If so, whats telhe best way to level is up for boarding, just skim with lime?

Finally got round to having a whirl at wood fibre boards (Child number 2 halted play). I've basically filled the holes in the walls with plaster, it's not straight.
When I come to stick the boards on, I've got big gaps, see from images, so is there such thing as lime based adhesive, or just plaster it till level? I don't want to force the boards flat and drill in, as they may pull out over time. What has people done in such situations?
Also what length screws did people use to attach to wall, most say only need 25mm in the wall, which doesn't sound alot to me.

On the screws: 25mm plugged into a 'solid' wall is just about sufficient, 25mm in friable old plaster probably isn't...
If it were me I'd be using stainless 60mm screws as the barest minimum, 75/80mm preferably.
Once the boards are pulled back to the wall they don't have any real 'spring' and shouldn't exert any pressure to spring back. It's more a question of if you want a contoured (but smooth) wall or something flat/square?

Would you mind sharing the total square meterage & cost? Trying to get a idea of what the professionals charge for this sort of thing...
We are currently getting about 50m2 of lime plastering done.
It was hard going finding someone who worked with lime. One guy came saying yeah I use lime all the time. I told him I’d take the old stuff off. He said great and asked if I could pva the walls too. Eventually we found someone who only works with lime and on conservation projects.
We got 2 tonne of sand and lime haired backing (mixed at 1 to 2 1/2).. 8 bags of stipple coat.. 10 buckets of setting stuff. This cost £1250 from womersleys ltd in dewsbury. Our guy charges £200 per day and £120 when he brings a lad. He starts early and gets stuck in. He’s doing it on Saturdays. First day was all the stipple coat. Next time was scratch coat. Yesterday was float coat to some walls and dubbing out to the others where needed. He called this morning to rub it up and will call Monday evening to do it again. (No charge for these visits) I need another half tonne of haired backing. I’m thinking it’ll be another 3 or 4 days of work. He’s doing a really good job and takes pride in what he’s doing.
Two skim coats when it’s ready for it. The cats leaving his stamp of approval too!
Was a while ago but scratching the memory banks, that did around 35 square metres, that quote was all my materials.
Hired three people on a day rate (800 per day for all three of them) they hacked off all the old plaster, boarded and skimmed in 4 days so about £3.5k labour. Then another £300 on waste disposal (skips etc).

Yes, there are a number of breathable plaster adhesives that you can apply to the back of the boards before positioning on the wall. Here's some:
