Freestanding Bath grumble!

I'd always put some sealant on anyway. Fernox LS-X, good stuff for the vast majority of plumbing sealant jobs. Toolstation sell it, as will any plumbers merchants, Screwfix probably do as well. Just a smear on the gasket faces and it'll do the job.

That alignment would be good enough for me, and I'm generally really bad for being a perfectionist! You'll never see it once it's in-situ.

I'd go taller option on the panels, in case of splashing. What are you doing for a shower? A separate cubicle, or is it just to be a sit in the bath job?

Are those panels MDF? If so, I've got those in my downstairs loo, and to quote an old Irish proverb they're feckin' sh**e, so they are, They've failed near the sink where they've been splashed..

Previous owner stuck them onto the grotty wall tiles with Gripfill

Yep - so if a rubber gasket was sandwiched between the bath and a fitting, I'd put a smear on both sides of the gasket. You don't need much, just enough to give a continuous bead and squidge in a bit all the way round. Just smear it on with your finger.

You could simply dispense with an overflow and fit one of those chrome or porcelein blanking plates. I think there is plenty of scope for fitting it off-centre.
In answer to the question " what happens if you leave the taps running unattended?", the answer is "Don't!"

I did once invent a device that would alert one to a rising water level. It was based on the intriguing noise that a bath plug makes if you pull the chain but hold the plug partly open at just the right height - a loud clanging noise in the waste pipe as the water escapes.
You put a stick through the centre of the plug, projecting downwards through the cenral hole in the grid, and at an appropriate point fit a float. As the water rises there comes a point where the float has just enough buoyancy to lift the plug a little, and the noise starts. I didn't experiment further to develop the device, having established that in principle it would work.

Lakan yes, sealing with some sort of goo is fine. Looking at the back side picture I see the overflow bend is following the contour of the tub meaning the fixture is designed at 90 degrees. This will cause you grief when fitting up the tub drain fixture to the T and at the rough in. The whole assembly is designed to be installed with right angle fittings. Does your drain fixture come with a seal with a wedge profile? If so you re going to need to use that one, it is designed for slanted tub installation.
