It would be nice to see a pic of the front of your house if you are happy to put one up. I probably won't be able to offer advice on what door to get, but it is nice to see things in context.

Seeing it in context, it makes more sense, given the house looks not unlike the keep of a castle. In a good way.

It has superb conformity to uneven gaps. I used it on our mock-Tudor elm door (the one in the current Topic Faux pas) which previously let in altogether too much 'ventilation'.
Depending on the gaps you have when closed, you may get better results from using two different thicknesses of tape. Measure the gaps carefully. Do not choose a tape too thick.
I do mean thicknesses, not widths. It comes in different widths as well, but the thickness refers to the gap it will seal.
I used 1.5-3mm along the side and top of our door, and 2-4mm along the bottom. The ultimate expansion is more than the given dims. For example, the 4mm, will perhaps expand to 7mm or more, but the conformity would be reduced. It is not wipe-clean, and is in fact designed for construction joints rather than draught-proofing, nevertheless it does a superb job.
I am also using it for secondary double-glazing seal.
Only in black, but with the door shut you won't see it.
Be aware that when you install it, the tape is initially very flat, and will expand over a period of several hours. After that, the rebound is pretty much instantaneous.
As to the thinness, of your door, as has been said, a curtain. The actual heat loss through the panels is not worth bothering about. The equivalent of having a hole in your sock.
