I always thought that as well - then I looked in the drinks cupboard at a bottle of "Makers Mark" Kentucky Bourbon, and it claims to be a whisky, not a whskey. I think FW is right and it's our colonial cousins not being able to spell!

Said bottle is at the back of the cupboard and nearly full by the way - I'm not a fan at all. Erm, simples......

A discussion on the exact spelling of "whisky" and "whiskey" is one of the times when there is a real need for pedantic accuracy in spelling, and it's always nice to beat Penners to it.

I was pondering this a little while ago, it will be interesting to read the results of your experiment when you publish them in Nature.

May I also suggest another test: breathing heavily on the lime. I'm sure that must speed carbonation. You can spare the time can't you? Should only take a few months.

I tried breathing on it before I had a whisky. I couldn't see a lot happening.
I tried again after a whisky, and the surface finish of the lime seemed to wave gently in the breeze.

I'll try again in a minute with a different whisky.

Meanwhile... the chunk I did with soda water on the covering cloths has carbonated nicely, and has been limewashed.
The area I did with plain water has the usual slight cracks, but doesn't look too bad so I limewashed that too.

Conclusion: soda water may have made a slight favourable difference. Further tests will be conducted when whisky stocks are depleted some more.
