Can I/Should I fill our cellar?

We are going to be using our cellar as a microbrewery - once I've removed the suspiciously live looking corroded old artillery shell on the window ledge!

It has been badly tanked once already, salt deposits everywhere and a couple of patches but de-humidifier system will be going in soon. Then some sturdy shelves out of 2" by 4" to support the demijohns (spelling?), then rock 'n' roll! :mrgreen:

I view it as my insurance policy. If the restoration ever gets too much I shall sit out the back door throwing stones at it, then claim for the whole wretched place on home insurance Would certainly liven up our village getting the bomb squad in, although there would probably be complaints about "blocking the street".

I had great plans for a wine cellar and home brewed ale down there but that's not going to happen now. We're on a rock formation that has water running through it so deposits of ground water rising with heavier rain as we had this year are likely in future years, it just depends if tanking will help or just push the groundwater somewhere else? We have an engineer coming out next week to have a look and tell us if our plan for an extention might go the same way as my wine?!

I'd expect that filling up your cellar would produce a similar result.
As I said before I think you'd be losing an aspect of your property that is irreplaceable and fitting a pump to keep your wine cellar dry seems really good sense.
