To clarify - if you used the thumblatch, I assumed you would use a separate latchless rim lock.
If you used the handles, I assumed that - being modern repro - they would have been designed to fit the dimensions of a certain type of rim lock. The text of the web page suggests this. I'm sure the manufacturers would clarify if necessary.

You could well be right (I'm often wrong) but I suspect they're designed to fit a mortice lock. I'm constrained in this regard: it would weaken the middle rail, which is structurally vulnerable on our gunstock door. Hence the need for a surface mounted rim lock.

I'm very pleased with this monster that I found in a skip. It is something like a nightlatch as the handle slides rather than turns and the key (if it had one) would move the bolt so it can be opened a bit like a yale lock. It is about 8" x 4 1/2"

We've got one exactly like that on one back door. It always fools visitors - no one ever thinks of sliding the knob, only of ineffectually trying to turn it.
It's also very easy to secure on the inside - just a heavy chain on a hook to stop it sliding.

The lock will have to go on/in the centre rail, which I'm sure is the default position for a gunstock door. Which, I may also unhelpfully say, would never have been used as the sole barrier between civilisation and the outside world.
