We are slowly doing up an old stone and brick house in Italy.There are some pics on my website

...Anyway I feel i've spent at least a year of my life 'trapped' in the upstairs bedroom slowly filling in massive gaps with lime mortar and pinnings and as last time temps were nearly 30 degs inside. I may even need to redo some of this work.The walls were covered in plaster which my partner hacked off revealing horrible gaps and crumbling mud mortar all needing to be raked out.I was excited as I could see the end in site and was looking forward to starting with the replastering .
This job has been so boring and lasted so long that Iwas horrified to hear him say we should take off all the plaster in the kitchen too!!! The kitchen has a cement based plaster up to about 2ft and lime above that.Presumably the plaster was put in to try to stop damp coming in.As well as this wretched stuff the previous owner was fond of slapping vast quantites of cement into any gap between stones.Can anyone give me some advice? Is it really going to be worth the hard slog of getting all this off (by hand as we have no electricity) repointing and filling with lime/pinnings ?Is there any quicker way of working with lime to fill big gaps ?I've been filling only 15mm at a time so it takes forever to fill a big hole(yes I do use stones/bricks as well)
