stone flag sealing

We have just relaid some old barn floor flags which seem to be a mixture of sandstones - mainly gritstone but some quite grey or green with orange marks (not rust) Have done a test with drops of water they allseem to be pretty absorbant. As this is going to be a dining room what can anyone recommend that is not going to make them looks shiny but is going to prevent stuff penetrating?

My dining room floor (Heather Browns not flags) is sealed with a number of coats of linseed oil.

Breatheable and not shiny. A couple of years in and no problems with it going black or anything. It is easy to clean and repels water/spillages well. It comes up nicely with a wash with Ecover floor wash (has linseed oil in it) and we have re-oiled it on an annual basis so far - very little effort really for a fab looking floor.

Simples.

Having carried out a number of test patches, once my flags are laid, I'm going for Liberon Stone Floor Sealer, followed by Liberon Stone Floor Wax.
