Re-pointing Flint Walls

I fancy completely re-pointing sections of my new purchase.

3" diameter flints with Suffolk White coined walls to my cottage.

so i'd imagine you find a suitable tool to rake out the old pointing?

then...

How do you get the new lime mortar pointing (3:1 sharp/soft sand to lime?) back in??
I thought by hand, wearing gloves of course?, or
using a plastering float and brushing back to the flint?, or
Using a pointing trowel and joint finisher, then brushimg back? ,or

any other suggestions?

Does it need pointing? Better to leave the historic stuff and only repair when required.
