Lime mortar plaster etc identification of

AS the title says - how can you tell? I'm fairly certain most of the walls are lime plaster but how can I tell for sure? And how do I tell what the tiles in the kitchen are grouted in? Any definitive tests that are minimally invasive?

Also assuming that they only way to tell what the tiles are laid on is to take some up.

Scrape some off the wall in a discrete location. Add a few drops of vinegar and it should gently fizz if it is lime.
