Internal insulation

Morning

New to this page. I have searched through the threads but haven’t found the answer to my question.

We have a full sandstone built property. Outside will be repointed in the spring.

Internally we have had to remove the lath plaster as was so old it crumbled off the walls.

Question is. We have built the frames for stud wall to replace but were wondering what everyone would use as insulation behind the plasterboard. Going to leave an approx 50-60mm gap from the stone. Just wondering what would be best to use.

Don't use plasterboard it will block the respirability of your house and create damp problems.
Woodfibre seems to be the best (I didn't insulate so will leave someone else to expand) to use as insulation and then lime plaster on top using non hydraulic lime. This is what your house needs and also will give you the feeling of the house you purchased.
No gap between the stone and the insulation that way your house walls serve also as insulation (and gains you living space into the bargain)

Buildings in Scotland were usually built with a ventilation gap between the plaster and the inner face of the masonry. This decouples the internal surfaces from penetrating rain water and the air flow up the gap helps dry the inner face of the masonry. Modern retrofitting advice seems to be veering towards putting the insulation in direct contact with the masonry but you would be strongly advised to only use breathable materials so the wall can still dry out. You can also stand it off on studs as you are thinking of doing and even use modern finishes like plasterboard and gypsum so long as the gap is effectively ventilated. As @Janela says you'll likely lose more floor space doing it that way. Breathable finishes are also better at managing humidity levels and can contribute to a healthier indoor environment.
