Chimney flaunching

Excited that work began on the chimney reinstatement today. Any tips on what I should be specifying for rebuild of this stack? The brickies seem to know what they're doing. Nevertheless, its good to check what they're up to.

There's flaunching at the base, where the two offset square flues rise up from the corbel course. Also, flaunching to bed the two 1m pots. Stability is my priority here, of course.

I see that Penners recently recommended cement for this job. That being so, it seems a straightforward job that I'm probably overthinking it (again).
