The chimney of our listed building is currently not capped in any way. We want to install a wood-burning stove in our inglenook fireplace and therefore require a liner installed in the chimney. Is there a way of doing this that preserves the current look of the chimney, i.e. without a visible chimney pot or bird guard, but still enables the chimney to function effectively?

With an open fireplace / chimney, rain falling down the chimney will initially be absorbed by the stones / bricks / cement (sorry) that it is made of. It will then evaporate from there over time. With a lined chimney, the rain won't be absorbed so it will run down the inside into your stove causing it to rust far faster than it would normally. This is why people fit rain hats to chimneys with stoves underneath.
Unfortunately I don't know of a solution which won't change the appearance of your chimney however you may find a ceramic pot complete with rain hat that you would be happy with. Just make sure it designed for use with a stove and isn't just a chimney cap for capping an unused chimney as these look similar.

You may find the following link useful, http://www.solidfuel.co.uk/pdfs/lining_old_chimneys.pdf I stumbled upon it when trying to decide how to terminate our uncapped chimney. It doesn't seem that the lining options summarised avoid the issue MdB highlights, but it may provide some ideas.

As MdB says, keeping water out is a big issue, and is pretty much ignored by the regulations (yes, there are regulations, surprise surprise).
I had to assemble my own rainhats for our two woodburners, can't say I'm that taken with the look of either, but they do work.

If you think about the problem of rain ingress for a moment, I think you'll agree that it's impossible to prevent this without a visible addition to the chimney, in the form of some sort of rain-hat.
If you're having one fitted, it's well worth choosing a model that has a built-in bird excluder. We've found that birds welcome the opportunity to build their nests under the convenient "roof" that a rain-hat offers.

Could you have one of those flat slabs that sit on top of the chimney on top of four mini plinths? I think you get them in stone areas of the country where the slab comes from the local stone (and isn't a paving slab which I have seen done round here). I'm not sure what they are called but it might be more in keeping depending where in the country you are and what type of house you have. Come on someone, what are those things called?

I looked into this, as I wanted to keep the clay pot cover I had, but it woudn't have worked with a woodburner, because you need a lot of cross-flow in order for the chimney to draw properly. In the end I went for one of those bird-guard rain hats.
