Bedding wooden frames on stone

We are fitting new wooden windows and doors into a restored Victorian stone outhouse. We see that the recommended material for bedding the wood is well-haired lime mortar but is it advisable to use lime in the present cold weather? If not, what other mortar/putty/mastic would be suitable? The fillets around the frame edges will be burnt sand mastic.
Any comments and suggestions appreciated.

Nice picture but a very silly article. Everyone (who knows about these things) knows that the long-range forecasts are problematic for quite fundamental reasons about the chaotic nature of fluid dynamical systems. The Met Office is, however, second to none in terms of short term forecasting in one of the most difficult parts of the planet.
